Easy Mango Chutney Recipe

This has to be one of the easiest recipes around - peel, chop, simmer - DONE!
Ingredients
Makes: 1 litre (approximately)
- 2 large apples - peeled, cored and grated
- 3 mangoes - peeled, stones removed and chopped
- 300g granulated sugar
- 2 brown onions, chopped
- 125ml vinegar
- 3 tablespoons grated root ginger
- 1 tablespoon lemon juice
- 2 tsp mustard powder
- 1 green and 1 red bird's eye chillies - chopped with seeds - this makes it medium heat. Use more or less to taste
- 1/2 teaspoon salt
Method
Prep:15min › Cook:60min › Ready in:2 hrs
- In a large large stainless steel saucepan over high heat, combine the apples, mangoes, sugar, onions, vinegar and ginger. Bring to the boil, then reduce the heat to a simmer. Allow to simmer uncovered for 60 minutes, until the fruit is tender.
- Add lemon juice, mustard powder, chilli powder and salt. Continue to simmer for 5 more minutes.
- I like to mash is up a bit for a smoother result but you can leave it lumpy.
- Spoon into hot sterilised jars and seal.
I keep a jar of this in the fridge at all times for curry nights, but also it's great in sandwiches and wraps! Enjoy!
